Traditional banoffee desserts are know for their combination of bananas and toffee. In this overnight oats version, sliced bananas bring natural sweetness while the Biscoff spread adds that deep, caramelized flavour that gives these oats their banoffee feel, no extra steps required.

Banoffee Overnight Oats

Ingredients
  

Base

  • cup oats
  • ½ cup Greek yogurt
  • cup milk of choice (I use unsweetened vanilla almond milk)
  • 1 teaspoon chia seeds
  • 1 tablespoon vanilla protein powder (Optional. If not using, add 1-2 teaspoons of sweetener, or use vanilla-flavoured yogurt)

Topping

  • ½ banana, sliced
  • 1 tablespoon Biscoff, melted
  • ½ Biscoff cookie, crumbled

Instructions
 

  • Blend oats, milk, yogurt, and chia seeds until smooth. Pour into a bowl or dish. If you don't want to blend them – that's ok. Just add everything to a bowl and stir until combined.
    ⅓ cup oats, ½ cup Greek yogurt, ⅔ cup milk of choice, 1 teaspoon chia seeds, 1 tablespoon vanilla protein powder
  • Top oat base with sliced bananas. Set aside.
    ½ banana, sliced
  • In a small bowl, melt Biscoff spread until runny. Pour over banana slices and spread evenly. Sprinkle with cookie crumbles.

  • Refrigerate overnight and enjoy in the morning!
